Sausage, Red Pepper and Courgette Skewers with BBQ Glaze

Sausage, Red Pepper and Courgette Skewers
with a side of Guacamole-pea
8 long wooden skewers
6 pork sausages, cut into 4 x 3cm pieces
2 large red peppers, cut into 4cm squares
2 medium courgettes, cut into 3 cm pieces
Fry Light

For the BBQ Glaze

1 tbsp cider vinegar
2 tbsp soft brown sugar
1 tbsp American-style mustard (like French's)
2 tbsp tomato sauce
1 tsp Smoked paprika

1, Soak the skewers in water for 10 mins (to stop them burning on the barbecue or in the oven).

2. In a small saucepan, add all the barbecue sauce ingredients. Sprinkle in some salt and cook on a medium heat for 5 mins to dissolve the sugar. Remove and set aside.

2. Onto each skewer thread approximately 3 pieces of sausage and 2-3 pepper and courgette chunks, alternation them on the skewer.

3. Heat and our door barbecue, griddle pan or over grill to high.  Spray the skewers with Fry Light and then season. Grill for 3 minutes each side and then brush with the barbecue sauce. Grill for 3 more minute each side or until the sausage is cooked and crispy on the edges.
