Orange-Scented Scones

It's a bit grey and gloomy here today, and I'm in the house waiting for a parcel. So what to do?

Well I decide to bake. Scones are something that reminds me of working in a cafe and kitchen with my mum. This is a very basic recipe, my one alteration is the addition of mixed fruit soaked in orange juice. I am starting to blog my recipes in metric as it makes it that bit easier to then convert to syn counts and calorie values if you need to.



225g Self Raising Flour
50g Margarine
25g Caster Sugar
50g Dried Mixed Fruits
1 Orange juiced and zested
1 Egg, beaten with milk and a little soaking liquor to make 150ml

1. An hour (or preferably overnight) before baking put your dried fruit to one side and soak in the orange juice until they get all plump. You could pop them in the microwave to speed up the process.

2. Pre-heat your oven to 220c (Gas Mark 7) and prepare your baking tray.

3. Rub in your flour and margarine until it reaches the breadcrumb stage. Stir through the sugar, zest and the strained dry fruit.

4. Add a little of the egg mix at a time until you get a soft dough.

5. Knead lightly on a floured surface and roll out to roughly 1cm in thickness, and cut into rounds (6.5cm rounds should give you about 8 scones).

6. Re-roll the trimmings and cut out further rounds.

7. Brush the tops with the remaining egg mixture and bake for roughly 10mins.

Try to not handle the dough too much or you will get a tough scone.
