Blue Cheese and Bacon Linguine

Serves 2

250g linguine
1 red onion, peeled and cut into wedges
300g bacon, cut into strips
56g soft blue cheese (I love Dolcelatte)
handful of snipped spring onions.

1. Cook pasta to packet guidelines.

2. Use frylight in a hot pan gry the onion for roughly 5 mins until lightly browned. Add the bacon and fry until cooked through.

3. Drain the pasta and add to the bacon and onion along with the cheese. Allow the cheese to melt a little. Season, scatter over the spring onions.

I like it with mushrooms mixed through too.
