Quesadillas with a side of pico de gallo, refried beans and guacamole-pea |
Serves 4
4 Large Flour Tortillas (I used)
120g mature cheddar
cooked bacon bits
cooked shredded chicken
chopped spring onions
Heat a health grill or panini press.
Layer half of each tortilla with chicken, bacon and onions and sprinkle over mature Cheddar cheese. Fold the tortillas in half and place in the grill/press.
This should take just 3-5 mins to become crispy and golden.
Cut into wedges and enjoy.
Serve with a large green salad with Salsa, Sour cream and guacamole to dip.
