350g Tricolore pasta spirals
1 Mattessons' sausage, sliced
1 large tub of cherry tomatoes
4 tbsp green pesto
large spoonful of extra light soft cheese
50g grated parmesan cheese
zest of 1 lemon
1.5 tbsp lemon juice
Salt and Black pepper.
Cook the pasta as per instructions and drain, reserving a mug full of the cooking water.
While the pasta is cooking, in a large frying pan cook the sausage until golden and heated through. Remove from the pan and set aside.
Add the tomatoes to the pan and cook for about 3 mins just to get a little colour.
Return the drained pasta to the pan in which you cooked it. Add the sausage, pesto, soft cheese, parmesan, a little of the cooking water, lemon zest & juice then season to taste.
Give it a good stir to combine and gently fold in the tomatoes. Cook over a low heat until just heated through adding more water if necessary.
