This is my twist on a recipe doing the rounds at Slimming World groups up and down the country.
Serves 4
2 Chicken breast, thinly sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
1 tsp Chinese 5-spice powder
3 tbsp tomato purée
1 tbsp Worcestershire Sauce
1 can Diet Coke (or any other brand of diet cola)
1. In a large frying pan or wok coated with fry light soften your onion, add chicken and brown.
2. When just cooked through add the sliced pepper and cook for another 2-3 mins, add the spice powder, tomato purée, Worcestershire Sauce and can of cola drink.
3. Bring to the boil, reduced to a simmer and leave for 10-15 mins until sauce has reduced by half.
4. Serve with noodles or rice and stir fry veg
