Serves 4
1 packet of stir fry vegetables
2 level tbsp of Green Thai Curry Paste
250-300ml Chicken stock
Soy sauce
Fish sauce
Stir fry in Fry Light the vegetable mixture. When softened add the 2 tbsp curry paste, chicken stock, add soy sauce and fish sauce to taste. bring to boil and serve.
You can also add a little very low fat natural yoghurt if you prefer a thicker creamy stock.
Optional extras:
Noodles, ramen or soba noodles (or wholemeal spaghetti) work well
Thinly sliced chicken breast.
