Cheeseburger Pizza

Many moons ago, far too long for me to want to do the maths anyway, I used to work for the American bar and restaurant chain Dave & Buster's. Oh my. My love for Americana, kitsch and bourbon was born (along with brownies and frozen cocktails). 

I held several roles there from being a bartender, to wait staff and front desk to boot. I also moonlighted in other sections too. Even now I look back at my time in Bristol with fondness, the hours were long but we played as hard as we worked. 

This is a dish that takes it's concept from one of the pizzas they used to serve. Just at a fraction of the calories and also used some of the staples from the Cheeseburger Salad Bowl from earlier this week. 

Light Cheeseburger Pizza. 

Serves 1

1 mission mini tortilla wrap
1 tbsp tomato sauce
1/4 of the mince & onion mixture from the Salad Bowl recipe
10g red leicester cheese, finely grated (or a slice of American/plastic cheese)
gherkin slices, finely diced
finely diced tomato
finely shredded lettuce
1tsp american mustard
1 tbsp Not-So-Secret Sauce

This is contructed in 2 parts.

On a baking sheet (I also lay on a square of baking paper) put your tortilla wrap.

Spread over a tsp of Tomato Sauce, crumble over the mince & onion mixture.

Sprinkle over the grated cheese.

Put in a pre-heated oven (GM8/230c) for 5-10mins until the meat is warmed though and cheese is bubbly. 

While the magic is happening in the oven, prepare your salad ingredients, this is the rest of the topping for your pizza.

Remove the pizza from the oven & plate up. Sprinkle over the lettuce, tomato and gherkin. Drizzle over the remaining tomato sauce, american mustard and the Not-So-Secret Sauce.

Serve & enjoy. 

This also works fantastically with a proper dough pizza base (just not so speedy).
