Honey Garlic Chicken


I've been playing on @Pinterest lately and I keep coming across some fantastic recipe ideas.
This one I have seen in various guises and thought that now was the perfect time to try it.  It takes less that 5 mins to prepare and you get to leave it in the slow cooker all day to cook. A pretty low maintenance meal if you ask me. 

Serves 4

1 pack of boneless, skinless chicken breasts
3 garlic cloves, chopped
125ml soy sauce
125ml ketchup
125ml honey
pinch of dried basil
pinch of chilli flakes
salt & pepper to taste

Cut your chicken breasts in half, sprinkle with salt and pepper and place in bottom of your slow cooker. Chop up your garlic cloves, I use a fine grater for this.

In a ziplock back mix the garlic, soy sauce, ketchup, honey and basil. Shut the bag and mush up until all mixed up. 

Add the chicken to the bag and leave overnight in the fridge.

Next morning, add the mixture to the slow cooker.

Set your slow cooker to low and leave for 6-8 hours. Remove chicken from crock pot and transfer to covered plate to keep warm. 

If necessary, transfer the sauce to a shallow pan, and heat until the sauce reduces to your desired consistency. Serve sauce over chicken.

You can serve this with rice and vegetables if you so wish.
