Simple Sweet Pepper Pasta Sauce

4 fresh tomatoes
2 sweet bell peppers (I used a red and an orange)
Garlic
1 red onion
Balsamic Vinegar

Pre-heat oven to 230c.

Cut the veggies up into large chunks. Put on a baking sheet and with the garlic (either unpeeled cloves or a couple tsps of lazy garlic is fine). Leave in the oven for 30mins until softened and just charring.

In a large jug blitz the veggies with a stick blender. Taste, and add balsamic, salt and pepper to taste.
