Orange Drizzle Cake

For the Cake:

6 oz soft margarine
6 oz light brown sugar
6 oz self-raising flour
2 eggs, lightly beated
zest of 1 orange.

For the topping:
juice of 1 orange
4oz caster sugar

1. Heat the oven to 190c/Gas Mark 4.

2. In a pan (or microwaveable bowl) melt the marg. Remove from the heat, add the brown sugar and stir until dissolved. Add the flour and stir well, finally add the eggs and zest and mix throughly.

3. In a prepared swiss roll or brownie tin pour the batter. Bake for roughly 15mins.

4. While the cake cooks, mix the juice and remaining sugar together and stir until mixed.

5. When cake is cooked through and springy remove from the oven and pour over the sugar solution. Leave the cake to cool in the tin. Cut and serve.
