Oaty Cookies

More often than not I make these cookies with the children as they are quick and simple to make with minimal clean up.

You can even substitute the dried fruit and seeds for whatever you have in or fancy at the time. Sesame seeds are always a popular addition, as are dried cranberries and white chocolate.

100g margarine/butter
50g soft brown sugar
2 tbsp runny honey
100g self raising flour
100g oats
50g dried fruit
1tbsp sunflower seeds

1. Pre-heat the oven to 180c and prepare a couple of baking trays.

2. In a microwave friendly bowl melt the margarine/butter, sugar and honey on high for roughly 1 min.

3. Add the flour, oats, dried fruit and seeds to the molten mixture.

4. Roll the cookie dough into walnut-sized balls.

5. Bake for 12-15 mins until golden and slightly firm to the touch.
