Chicken Balti

Serves 4

1 large onion, peeled and chopped
3 tsp each minced garlic and ginger
 1-2 fat red chillies, deseeded and finely chopped
4 chicken breasts, cut into bite-sized pieces
Fry Light
2 tsp ground coriander
1 tsp each ground cinnamon, ground cumin, paprika, turmeric and mustard powder
3 whole cloves
3 green cardamom pods, lightly crushed
400g tin chopped tomatoes
2 tbsp lemon juice
handful of fresh coriander leaves, chopped
salt and pepper.

1. In a food processor blend the onion, garlic, ginger and chillies until it becomes a smooth paste.
2. Spray a large pan with Fry Light and fry the onion paste for roughly 5 mins.
3. Stir in all the remaining ingredients along with 450mls water. Bring to the boil, reduced the heat and simmer for 30 mins. Season to taste and serve.
