Texas Cheese Fries

This is a recipe I found on skinnytaste.com

Serves 2

2 large potatoes, washed and dried with the skins on.
2 tsp olive oil
1 tsp smoked paprika
1/4 tsp chilli powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp cumin
salt and fresh black pepper
2 rashers lean & trimmed smoked back bacon, grilled and cut into bits.
60g grated mature cheddar
2 tbsp sliced spring onions
1 tbsp sliced pickled jalapeƱos (I used Discovery's jarred ones)


Pre heat oven to 200c. Line a baking tray with foil (for easy cleaning). Lightly coat with cooking spray.

Cut each potato, into chips. In a large bowl, toss the potatoes in the oil. Add the seasoning and toss again.

Place the chips in a single layer on the baking tray. baking uncovered for roughly 25mins or until crisp and cooked through. (this may take longer depending on the size of your chips).

Remove the tray from the oven and place fries in 2 small oven safe dishes (or if you want to share 1 big one). Top with the cheese, jalapeƱos, spring onions and bacon bits. Return to the oven until the cheese is all melty.

Serve.
