Ginger & Orange Peppers

1 large red onion, finely sliced
1 large red pepper, cut into bite-sized chunks
1 large orange pepper, cut into bite-sized chunks
1tsp chicken bovril paste
1tsp lazy garlic
1inch fresh ginger chopped
2 tbsp soy sauce
splash of water
splash of no added sugar orange squash

In a non-stick wok sprayed lightly with fry light quickly stir fry the onion and peppers, when they start to soften add the garlic, bovril, soy, orange squash and ginger. Give it a few minutes to bubble up, taste and see if you need to add any water or not.

Let the sauce thicken slightly & serve.

You can also use some chilli flakes to spice it up a little or a tsp of Ginger Chilli Jam available here from the Chilli Jam Man.

Serve alongside diet coke chicken and noodles.
