Creamy Bacon Spaghetti

Serves 2

1 onion, finely chopped
1-2 cloves garlic, grated
6 rashers of smoked bacon, sliced into ribbons
50g Medium Fat Soft Cheese
1.2 ham stock cube
splash of water.
250g spaghetti

In a large pan bring a pan of salted water to the boil, add the spaghetti and stir.

In a large frying pan or wok, soften the onion and garlic in fry light. Add the bacon and cook until golden.

Add the half a stock cube and water and cook through.

Add the soft cheese and stir until incorporated. By now the spaghetti should be ready. Strain and add to the pan with the cheesy sauce in. Pull the pasta through the sauce until well coated.

Serve with a side salad.

On this occasion I have made some vegetable spaghetti from butternut squash and carrot to get that extra vitamin punch.
