Corned Beef Hash

Serves 4-6

Fry light
1 large onion, chopped
2 celery sticks, trimmed and sliced
2 medium carrots, roughly diced
300g potatoes, peeled and cut into 1cm dice
1-2 tbsp tomato ketchup 
1 tbsp Worcestershire sauce
340g can corned beef

In a deep non-stick frying pan sprayed with fry light add the onion, celery, carrots & potatoes. Cook over a low heat for roughly 15 mins until the veggies soften, stirring regularly.

Add the ketchup and Worcestershire and stir into the veggies before adding the corned beef. Break up the beef with a wooden spoon into chunky bits and mix in with the veggies. Season with lots of black pepper.

Continue to cook though until potatoes start to 'give'.

I serve with baked beans and a fried egg.
