Orange and Ginger Chicken


1 can diet orange drink (eg Fanta Zero)
1 large onion, sliced
2 large chicken breasts, sliced,
2 cloves garlic, crushed
6 tbsp passatta (or 3 tbsp tom puree 1.5 syns)
1 tbsp grated fresh ginger
Splash Soy sauce
1 red chilli, finely diced
1 tsp lemongrass paste (or roughly half a stick finely sliced)
1 carrot, in matchsticks
red pepper, thin slices

Brown onion and chicken in fry light. Add the chilli, garlic and ginger fry a little longer. Add the passatta, orange drink, lemongrass, peppers and carrots. Bring to boil, reduce to a simmer and cook until thick.

Serve with noodles and syn free stir fry veg
