Tomato and Mascarpone Pasta

Serves 4 - 3 syns per portion


1 box of Tomato Passatta
1 tsp dried oregano
2 garlic cloves , grated
57g mascarpone
small bunch basil, chopped
500g pack penne

Boil the pasta until just before ready. Drain and set to one side. In the pan add the mascarpone, and slowly heat up. When melted add the passatta, vinegar, oregano and garlic.

Bring to the boil. Season to taste with black pepper. Add the pasta and heat through until al dente (this thickens the sauce) add the shredded basil.

Serve.

My Boys love this one served with extra cheese on top.
