Lazy Girl's Curry

 Lazy Girl's Curry served with mushroom basmati
2 onions, roughly chopped
1-2 cloves garlic, crushed (or 2 tsps lazy garlic)
2 chicken breasts, diced
2 tbsp medium curry powder
1 can chopped tomatoes
roughly 500ml passata
handful of red lentils
1 tbsp garam masala
1 tsp mint sauce
handful of chopped coriander

1. Soften the onions and garlic after 3-4 mins add the curry powder.
2. After 2-3 minutes add the chicken. When browned and coated in the curry mixture add the tomatoes, passata and lentils. Leave to simmer for 10-15 mins. You may need to add extra water but this is your judgement. Stir occasionally.
3. Add garam masala, mint sauce and coriander. Cook for a further 5 mins.
4. Serve

You can also leave to cook in a slow cooker after browning the chicken.
