Chunky Tomato and Rice Soup

1 onion, chopped
2 cloves garlic, grated/crushed
1 stick celery, chipped
400ml veg/chicken stock
400g tin chopped tomatoes
handful of easy cook rice
salt and pepper to taste
you can also add any other fridge bound veggies, eg carrots, green beans, courgette, peppers etc

Fry onion for a couple of mins.

Stir in garlic, celery and veg. Cook for 4 minutes.

Add stock, tomatoes and rice. Leave until veg and rice are tender.

Season and serve.
