Smoked Sausage jambalaya

Serves 4 - 4 syns per portion

2 red onions, finely chopped
2 garlic cloves, crushed
2 sticks celery, chopped
1 tsp coriander seeds
227g pack of Mattessons Reduced Fat Smoked Sausage, sliced
1 red chilli, sliced
225g brown wholegrain rice
2 vegetable stock cubes
400g can chopped tomatoes
Salt and pepper
1 tbsp fresh chopped parsley

Instructions

1. Pre heat over to 200c/400g/gas mark 6. Then pre heat a non stick frying pan.

2. Heat a large pan, fry onion in Fry Light until lightly browned. Add garlic, celery, coriander seeds and sausage. Stir in chilli, rice stock and tomatoes. Pour in 600ml of water to cover rice, bring to boil, reduce heat and simmer for 20 mins until rice is cooked.

3. Season with salt and pepper, sprinkle over parsley. Serve with fresh vegetables.

Can be made vegetarian by replacing the sausage with either quorn sausages or pieces.
