Lemon Pepper Baked Chicken


roughly 8 drumsticks
(or a pack of chicken goujons cut to make nuggets)

2 slices wholemeal bread from a 400g loaf
1 tbsp garlic pepper mix
zest of 1 lemon
1 beaten egg







1. Pre-heat oven to 200c or Gas Mark 7

2. Lightly toast the bread. Blitz in a food processor to make breadcrumbs.

3. In a large food bag mix the breadcrumbs, garlic pepper and lemon zest.

4. In a bowl place the beaten egg.

5. Coat the chicken bits in the beaten egg, and drop into the breadcrumbs. Close and shake the bag to coat evenly.

6. On a baking sheet sprayed with Fry Light, put chicken in the oven. For 30mins or until golden and cooked through, Turn at 15mins and spray again with Fry Light.
