Chilli Cheese Chicken

Serves 1

1 skinless chicken breast
1 tbsp runny honey
10g reduced fat mature cheddar cheese
1/2 red onion, finely sliced
1 tbsp thai chilli sauce
Salt and freshly ground black pepper

1. Pre heat oven to 200c/400f/gas mark 6.

2. Season chicken and place on a chopping board, with a sharp knife make a pocket in centre of breast.

3. Insert cheese and onion, then place on a non stick baking tray.

4. mix chilli sauce and honey together and pour over the chicken. Bake for 25-30 mins until cooked through.

5. Serve with red onion garnish and a large side salad
